Elaboration: The elaboration process is totally traditional, it begins with a preferential maceration of the clusters, and later, after the de-stemming it passes to a fermentation in a wooden tub at a controlled temperature. Next, the malolactic fermentation takes place in the barrel, and finally it is aged for 20 months in French oak barrels.
