The Roca Brothers and The Macallan: Bottling Paris

The Macallan and the Roca brothers travel to Paris to create Distil Your World Paris, a single malt aged in sherry, bourbon and Cognac casks and inspired by the city’s food culture.

A Scottish distillery, three brothers from Girona and the city that invented the modern restaurant. That is the recipe behind The Macallan Distil Your World Paris, a limited edition that turns Parisian food culture into a single malt.

Some whiskies are best understood with a map in hand. The Macallan's Distil Your World collection is built on that idea: travel to a great city, soak up the way it eats and drinks, and translate it into whisky. After destinations such as Hong Kong, the Scottish house has set its sights on Paris. And it has done so with a distinctly Spanish accent.

A trip to Paris with a Girona signature

For this edition, The Macallan's Master Whisky Maker, Kirsteen Campbell, worked alongside the Roca brothers, the soul of El Celler de Can Roca, twice named the best restaurant in the world. Joan in the kitchen, Josep in the dining room and the cellar, Jordi on desserts: few people understand better how a flavour can tell a story.

In Paris they were welcomed by chef Anne-Sophie Pic, one of the most decorated chefs in the world. Together they explored the city in search of what makes its table unique: bakeries at dawn, neighbourhood bistros and the tradition of the table d'hôte. Paris saw its first restaurant open in 1765, and ever since, eating well has been part of its identity. That journey can be seen in the documentary Distil Your World Paris, and it has also become a gastronomic menu created by the Rocas together with the brand.

Four casks and a nod to Cognac

What makes this whisky special lies in the wood. Kirsteen Campbell has combined four types of cask:

  • Sherry-seasoned American oak, bringing creamy sweetness and perfumed notes.
  • Sherry-seasoned European oak, adding depth and structure.
  • Casks that previously held bourbon, with their tropical and toasted touch.
  • Cognac casks, the great nod to France and the novelty of this edition.

The result has a colour the house itself has named "Parisian Sunrise": the golden tone of first light over the city's rooftops.

What you will find in the glass

Distil Your World Paris is a boulangerie whisky. On the nose and palate come buttery notes of freshly baked baguette and brioche, creamy sweetness, floral and tropical touches, sandalwood and soft spices that carry it through to an aromatic, elegant finish.

A tip for enjoying it: serve it neat, in a tasting glass and at room temperature. Let it breathe for a couple of minutes, then try it with a few drops of water to open up the aromas. If you are looking for a pairing, think of a Parisian breakfast: a butter croissant, a fruit tart or dark chocolate.

A box that tells the story too

The presentation is part of the journey. The box traces key Paris landmarks and opens onto an interior in street-lamp yellow, a tribute to the light of its streets. The illustration, painted in gouache by Parisian artist Cassandre Montoriol, shows a lively table d'hôte scene. It is a piece made for collectors and for gifting on special occasions.
