To understand the legend of Yamazaki, we must travel back to 1923, when Shinjiro Torii, known today as the father of Japanese whiskey, founded the distillery. His mission was not to copy the Scottish model, but to create a whisky that would maintain its fidelity, but with a subtle flavor and perfectly adapted to the delicate Japanese palate.

To achieve this, Torii joined forces with Masataka Taketsuru (who had learned the art of distillation in Scotland) and focused on precision craftsmanship, the philosophy of quality and, above all, location.

The key to its excellence lies in its location: Kyoto

The exceptional quality of Yamazaki is impossible to replicate outside its borders. Its secret is based on the natural elements of its strategic location:

Water: The distillery is located in Kyoto, where the confluence of three rivers provides the purest spring water in Japan. It is such a crystal clear water that it is considered ideal for tea, in fact, the first tea shop in Japan was founded there. Water is the basic element that gives whiskies  fine and delicate alcohols. Its different mineralizations are vital to achieve unique nuances.

The weather: Kyoto's seasonal contrast is crucial. Hot, humid summers followed by cold winters accelerate and deepen whisky aging. This combination of pure water and temperature changes contributes to complex whiskies with deep flavours.

Avant-garde and art: Yamazaki's unique personality

Unlike Scotland, where distilleries often swap whiskeys to create complexity, Japan has few distilleries and each must be self-sufficient, creating an immense spectrum of internal styles. Yamazaki is a pioneer in this avant-garde:

  • Distillation diversity: they handle 16 stills of 8 different types, some fired and others steam-fed. They control complex processes such as fermentation time and cuts to achieve a wide palette of base flavors.

  • The treasure of the barrel: the distillery houses nearly a million different barrels. This massive stock allows its master blenders to experiment and ensure that each single malt offers an unrivalled personality.

This artisanal dedication, which does not skimp on resources or complexity, allows each bottle to be a work of art.

Yamazaki and the global palate

Today,  Yamazaki's single malt is recognized worldwide for its pure, elegant and delicate character. It has conquered the global palate thanks to its meticulous craftsmanship and flavors that often include fruity notes, mild spices and that subtle influence of Japanese oak (Mizunara).
